A dominant marinade

My dad is a twin; he and Uncle Herm are beyond awesome. Actually, if there were a certification for being a bad ass they'd have it for sure. If you know these two, then you're aware they have a serious passion for food. You name it, they have a recipe for it and their weapon of choice... the grill.

Many years ago these two came across this soy sauce marinade that takes poultry and salmon to the next level. It's too good to keep within the family:

Ingredients:

  1. .5 cup - low sodium soy sauce
  2. 1 tablespoon - extra virgin olive oil
  3. 1.5 tablespoons - sugar
  4. .5 teaspoon - ground ginger
  5. .5 teaspoon - minced garlic
  6. .25 teaspoon - garlic powder
  7. .25 teaspoon - ground red pepper (optional - for a little kick)

Instructions:

  1. Add your poultry/salmon to a large Ziploc bag,
  2. Mix the marinade ingredients together,
  3. Add the marinade to the bag and make sure your meat has been covered,
  4. Place the bag in the refrigerator for 60 minutes and flip the bag after 30 minutes, and
  5. Grill or broil as desired.

Extra tip – make a homemade sauce. Put the extra marinade in a pan (on the stove) on medium-high heat and stir constantly. As it begins to boil reduce the heat to maintain a light simmer. The liquid will begin to reduce (thicken) into a light sauce. Continue reducing until desired thickness – you'll want a runny barbecue sauce consistency.
